What's for Dinner, Tues., Jan. 6, 2025 [View all]

Pizza. I have a pesto pizza crust ready to be rolled out. Next up will be to make a pizza sauce, and then add my toppings which will be plant based "hamburger," onions, peppers, mozzarella, and cherry tomatoes.

Big leafy green salad to go with it. I made a new dressing from the Choi of Cooking cookbook. It is called Orange Bang Vinaigrette, and it has orange juice, yellow miso paste, ginger, soy, rice vinegar, chili oil, squeeze of lime. I plan on using tangelo slices, red onion, and bits of green pepper in the salad.

Kombucha: pineapple.

Dessert: If I only have one slice of pizza, I might have dessert: Haagen Daz vanilla bean with toasted cashews.
