What's for Dinner, Tues., Jan. 6, 2025

Pizza. I have a pesto pizza crust ready to be rolled out. Next up will be to make a pizza sauce, and then add my toppings which will be plant based "hamburger," onions, peppers, mozzarella, and cherry tomatoes.

Big leafy green salad to go with it. I made a new dressing from the Choi of Cooking cookbook. It is called Orange Bang Vinaigrette, and it has orange juice, yellow miso paste, ginger, soy, rice vinegar, chili oil, squeeze of lime. I plan on using tangelo slices, red onion, and bits of green pepper in the salad.

Kombucha: pineapple.

Dessert: If I only have one slice of pizza, I might have dessert: Haagen Daz vanilla bean with toasted cashews.

Linguini pasta primevera with chicken Italian sausage and salad with pepperoncinis.

I'm not feeling well today, so we ordered dinner delivery for an early meal. I usually get kalua pork, cabbage, rice, and macaroni salad when we order from our local Hawaiian storefront spot. I am a creature of habit. Also, it's easier than making decisions, lol. Ms K ordered a fire chicken plate.

It includes onions, garlic, carrots, celery , spinach, canned tomatoes, spicy V8, canenellini beans and ditalini pasta. Hot bread and butter, hot decafe tea.

I once made some delicious chicken legs by covering them in mayo and mustard, then panko.

Steam- fried in evoo and veggie broth: chopped onion and minced garlic. When soft and when most of the liquid evaporated I added sliced mushrooms and cooked until they released their liquid. I added a lb of organic baby spinach and cooked until done. Finally I added cooked pinto beans and whole wheat penne. I seasoned with S&P, red pepper flakes and drizzled on more evoo. Homemade vegan parm on top after plating. Cheers!🥂
