3. We enjoyed almost everything we tried...

with the exception of boiled peanuts and eastern North Carolina vinegar-based BBQ (loved all the BBQ we tried except that one). We became major fan of sweet potato pancakes and southern style biscuits and gravy. Made most of our lunches from the fare of local produce stands/farmers markets. Also enjoyed steaks and southern seafood.

We ate well.

Enjoyed several B&B's; our two favorites being Afton Mountain Inn in Virginia, and Mansfield Plantation in the Low Country of South Carolina.

It was a great time.

Edit: You mentioned planning your next road trip. We're planning one for next summer with our adult daughters and son-in-law. Switzerland, southern France, and Spain (all via train). We have a friend in Switzerland who will be going with us; Daniella speaks several European languages, and is a major asset to our vile German and Spanish.
