2nd the idea of Cover Crops.

Field Peas are easy, fix nitrogen in the soil,
require very little maintenance,
self weeding after they get started (they are thick and block sunlight for weeds),
thrive in drought and heat,
taste great (dried or fresh) and are easy to pick....or not.
