I like them sliced with plain yogurt or with grape nuts or just by themselves. I've done canning and preserves before, but now I have two different people who will take all I give them and give me preserves in return. Peach preserves are my all time favorite, but I'm not really fond of all the work required to get them. For the peaches I send off to make preserves with, I pick them at the mature stage (as opposed to the ripe stage). For the ones I eat by themselves, I leave them on the tree until they get to the ripe stage.
