it turns bitter and goes to seed quickly. Since lettuce is self pollinating, it will go to seed, and you will have much more seed so that's a perk.

I've been saving seed for over 30 years. I used to sell them. Lettuce, peppers, peas, beans and tomatoes are self pollinating. Corn and spinach is wind pollinated. If we lose pollinators, we will at least have these things. If I'm not mistaken, Arabica coffee is also self pollinating.
