What's for Dinner, Wed., July 1, 2026 [View all]

Cherry chicken lettuce wraps. Has celery, green onions, mayonnaise, Greek yogurt, lemon balm, salt and pepper.
I cooked the chicken breast in my slow cooker yesterday. I'm using iceberg lettuce, which I chilled in ice water when I washed it. Wrap the chicken salad in the lettuce leaf and top with toasted almonds and the cherries.

I was happy to find a recipe that used lemon balm. I have it growing all over my place. Here's a pic of a young lemon balm plant, which also makes a very relaxing tea. Almost like a drug--calms you down.


A bowl of cantaloupe with chopped mint leaves.

For dessert, a chocolate chip mochi and decaf cold coffee with half 'n half and cinnamon.
