'The Compassionate Cook' by Ingrid Newkirk, and a number of back issues of 'Vegetarian Times', but really, these days I mostly simply go to regular recipe sites. So many yummy dishes out there simply don't have animal parts in them, and you tend to have thousands of choices from any given site.

(Disclaimer: I've never been vegan, and am not currently vegetarian, just trying to eat less meat than in my worse years as an omnivore.)
