This is PA Dutch red beet eggs. Cheap and delicious.
1 dozen peeled hard boiled eggs
1 can sliced beets with juice (store brand, not pickled beets)
1 cup cider vinegar
1/2 cup sugar
1 1/2 cups water
In large container, add eggs to beets and juice. Boil water, vinegar and sugar until sugar is dissolved. Stir this into container with eggs, beets and beet juice. Allow to marinate at least overnight. Delicious with a sprinkle of salt. I always end up discarding the beets.
