Apple’s Quick Start? Can’t find anything about it online, chatted with Apple and they don’t know what the difference is.

Obvs don’t want to lose any functionality or data. Trust Apple far more but no idea if I’d be losing something or causing a problem by not doing the transfer via straight talk. Anyone know?
