If you're going to hang your argument on the language of the amendment you have to address this:
Whenever the Vice President and a majority of either the principal officers of the executive departments or of such other body as Congress may by law provide, transmit to the President pro tempore of the Senate and the Speaker of the House of Representatives their written declaration that the President is unable to discharge the powers and duties of his office
Trump, unfortunately, is able to discharge the powers and duties of his office -- he can set foreign policy, he can sign or veto legislation, he can nominate executive branch officers, etc etc. The fact that he does so badly, even irrationally, doesn't mean that he is unable to do so. Put another way, it wasn't meant to address a president pursuing policies that most people hate. That's what elections are for, or where those decisions constitute high crimes and misdemeanors (including war crimes), impeachment.
The amendment was intended, as suggested above, to address a situation where the president is out of commission, not out of his mind.
