What's for Dinner, Wed., May 27, 2026

Using my fresh garden broccoli, I'll make a naan bread pizza. Provolone and mozzarella. Sauteed garlic, too.

Zucchini, feta cheese, and mint salad with homemade vinaigrette.

2. I came home, tired from work. Didn't want to turn on the stove or the oven

due to the heat.

I whipped together a Charcuterie of provolone cheese, French dried sausage, and sesame-seed baguette chunks to be dunked in 100% extra-virgin olive oil. Satisfying and I felt like I was in Provence.

I also mixed a small gin-and-tonic.

I'm sighing with satisfaction.

Two Muncher cucumbers.

a row of marigolds.

And I, too, am sighing with satisfaction.

Up yet tonight: transplanting about 30 coleus into small pots.

I have one entire 4 x 12' bed I'm devoting to coleus.

3. Baked Beans

Used my aunt’s recipe that was a favorite of mine when I was a kid. She’s still going strong at 85 and still makes her delicious baked beans for all family potlucks…upon request. Her recipe uses baby Lima beans instead of the usual navy beans. I also made oven roasted seasoned cauliflower slices and whole wheat couscous with scallions and mushrooms. Cheers!🥂

Breakfast was a repeat of last night’s dinner (vegan spam and tofu scrambler—and maple syrup *did* make the spammage quite a bit better!) so I didn’t have the rumbling hunger I usually do closer to dinnertime. I went with the sad frozen burrito (brown rice and pinto beans) with jalapeño sauce for dipping. It’s apparently been a while because it did hit the spot.

The burrito wasn’t so sad if it hit the spot, right?

I like those frozen burritos. Handy to have around because there are days when we just don’t feel like cooking.

We do eat a LOT of burritos around here, which is why it sometimes feels pedestrian to me—but yeah, brown rice, pinto beans, and some spicy pepper sauce? It’s a staple for a reason!
