(1,150 posts)So what I am making is pretty far removed from traditional Memorial Day fare: my mother's Pork Potato Pie, which is similar to tourtiere. It has sage pork sausage, crumbled; mashed potatoes; and grilled onions all mixed together inside a normal pie crust. My mother made her pie crust from scratch; I use the Pillsbury refrigerated one (no room to roll out pastry in my tiny kitchenette). It's a treasured meal for my wife as well as my daughter.

(1,881 posts)bought from a local place yesterday, to reheat. Homemade potato salad with lots of eggs, very mustardy and vinegary, the way we like it. Dessert is looking like it will be leftover cake, which we shared at the church potluck today because today is our 40th wedding anniversary.

Fennel, Eggplant, and Turkey Sausage ziti. Hoping the store will have Beyond sausage I can sub.
It's sooo quiet here. Everyone's gone.

(2,018 posts)Lentils cooked in veggie broth, tomato paste, garlic and bay leaves. When done and thickened I stirred in Carolina style bbq sauce. Also made air-fried seasoned cauliflower florets and parsley potatoes as sides. For dessert I made an ice cream pie with Bryers Oat Milk vanilla, toasted pecans, and coconut in a cookie crust. (25,145 posts)Were clearing out our freezer. Theres a small swordfish steak and two small Italian pork sausages. Time for creativity.
Appetizer
Slices of grilled sausage with stone ground mustard. Toasted French bread and butter. German pilsner beer.
Entree
Grilled marinated swordfish with lemon, capers and Tartar sauce. Grilled red potatoes. Mixed salad of chopped Romaine, onions, cherry tomatoes, cucumbers and slivers of green peppers topped with French dressing.
Dessert
Vanilla ice cream with chocolate chip cookies and anisette.
