What's for Dinner, Thurs., Jan. 8, 2026

Appetizer is cup of tomato basil soup, with fresh basil julienned over the top. The fresh basil makes a big difference. In addition, I add one large cheese tortellini to the soup.

Chicken curry meatballs over couscous. I added sauteed onion and flecks of herbs like parsley to the couscous, plus a squeeze of lemon juice.

Kombucha: ginger.

Dessert: mug of hot chocolate with marshmallows.

leftover rye toast/butter, fudgesicles for dessert. the beef is leftover mesquite grilled sirloin. should give a little smokey flavor. guess I better get to it so it can simmer a while. broth is from a carton this time. I had to drive to Tucson today.

almost forgot tomato, cuke, feta, dill, sweet onion, salad! love it so much with homemade or bottled Caesar dressing

How much I love Caesar dressing. I think I’ll make some tomorrow. If I buy Marie’s, I add more Hellmans and grated parm, plus more coarsely ground black pepper.

I have laid in a good supply of mayo, though, so I’ll probably make my own.

homemade or Marzetti's is better, though a new brand showed up at Safeway over xmas - Cardini's (original Tijuana restaurant?) but also seems to be owned by Marzetti's according to label. both good but slightly different taste.

4. Seitan "Turkey"

Bought some freshly made, thinly sliced seitan “turkey” from a local vegan restaurant which they also sell for take out, along with their homemade gravy. I heated it up with the gravy and made a baked stuffing with whole wheat bread cubes, celery, onion, mushrooms and herbs. Also had freshly made applesauce and steamed green beans. Comfort food night. Cheers!🥂
